Healthy Meal:
Thai Citrus Shrimp Stir Fry
1 tablespoon sesame oil
1 tablespoon minced ginger
11/2 tablespoons minced garlic
2 tablespoons black sesame seeds
3 cups shredded cabbage or 1 small bag of shredded cabbage
2 cups fresh broccoli florets
1 1Ž2 cups sugar snap peas
1Ž2 cup sliced red pepper
1Ž2 cup sliced yellow pepper
1Ž2 cup sliced yellow onion
1 tablespoon sliced green peppers
1 table spoon chopped cilantro
1Ž4 cup low sodium vegetable stock
Sauce
1Ž2 cup low sodium Thai chili sauce
1Ž2 cup low sodium teriyaki sauce
2 tablespoons orange juice
1 tablespoon fresh lime juice
In a hot skillet add sesame oil, followed by ginger and garlic. Then add all vegetable except green onions cook till slightly tender then add shrimp toss till slightly pink then add all ingredients for the sauce then reduce for about 4 minutes. Remove from heat then serve over a bowl of Basmati rice, then garnish with green onions.
Exercise:
Raise the roof (20 reps)
