You can eat it raw, steamed, sautéed, chopped, ground, mashed, pureed, as sauce, or as dough. Yes dough, as in pizza dough! Cauliflower is a very versatile, healthy food. One medium head of cauliflower has only about 146 calories, but contains 12 grams of fiber & a whopping 11 grams of protein. That’s a large amount of protein for a vegetable! Below is an easy recipe for cauliflower pizza dough to help you incorporate it into your diet in a familiar way.

Ingredients:
1 head cauliflower
1/2 cup shredded mozzarella (vegan option nutritional yeast)
1/4 cup grated Parmesan (vegan option almond cheese)
1/2 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
2 eggs, lightly beaten

Chop florets off cauliflower and “rice” it in your food processor.

Place it in a microwave safe bowl, place a lid on top without closing completely for ventilation, & set it to 5 minutes.

After letting it cool place it in a towel and wring as much excess water out as possible.

Mix with ingredients above. Spread mixture thickly on a cookie sheet and bake at 400° for 20 minutes. Add desired toppings & cook an additional 10 minutes.
