Day 16 – The Power of NOW

Journal Entry: It is time to erase the habit of procrastination to complete the task ahead now.

Healthy Meal:

Egg white muffin omelets

16 ounces egg white

1 small onion diced

2 Roma tomatoes diced

1 cup fresh spinach

Salt and pepper to taste

1Ž2 cup parmesan cheese

1Ž4 cup coconut oil

 

1 muffin pan

 

Grease muffin with coconut oil, then set aside heat oven to 350 degrees. Add leftover oil to a small skillet under medium high heat then add all vegetables season and lightly sauté. When done remove from heat and allow to cool. In a bowl whisk egg white until frothy, this is done to create air and make the eggs light. Place 1 table spoon of the vegetable mixture in each muffin section then pour in eggs to cover mixture leaving 3Ž4 of the rim free. Sprinkle some of the parmesan cheese on each then bake in the oven for 10-15 minutes, use a toothpick to check when done it should be clean when removed. When done remove from pan and serve.

Exercise: 

Punching (20 reps)

While rocking foot to foot, punch with alternating arms. To reduce elbow stress, try not to fully straighten your arm
